The story
About Le Tourier
A tourier is the pastry specialist responsible for laminated doughs — the croissants, pains au chocolat, kouign amann. It's a real job title in a real Parisian boulangerie, passed down through years of apprenticeship. Wear it if you've earned it, or aspire to it. Sage green on cream cotton, like the apron of someone who actually knows what they're doing.
